Where better than Italy to explore the culture of food and the new ways in which old traditions are adapting to the sustainability movement.

EXPLORE THE INTRICATE LINKS BETWEEN FOOD AND CULTURE

Ferrara is a small charming city filled with Renaissance palaces, moats, and world class museums and active university life. Midway between Venice and Florence, students explore the intricate links between food and culture, including the Slow Food Movement, organic food, and biodiversity.

LEARN BY MAKING AND TASTING

Hands on pasta and pizza making sessions as well as farm visits and discussions with a nutritionist take learning out the classroom to create lasting experiential experiences.

GAIN INSIGHT INTO THE EXPORT ECONOMY OF FOOD

Day trips to Modena and Po Delta introduce students to Italy’s export economy with visits to Wineries, parmesan and eel factories, and a balsamic vinegar farm.
