Program Overview
Over the past decade, Peruvian cuisine has become an international phenomenon, creating interesting social and cultural implications within the country. The challenge now is to use this growing trend to stimulate economic growth and conscientious social change while protecting the environment. During this seminar, we’ll explore the current state of Peruvian gastronomy, both locally and internationally, as well as the positive and negative impacts it has on agriculture and development within Peru.

Program Activities
Lectures and dialogues with local experts, a documentary screening, a cooking workshop with a local chef, and firsthand experience with traditional cuisine will provide participants with multiple formats to explore the Peruvian gastronomic industry. Participants will engage with seminar content through the lenses of history, food and meal preparation, economic growth and impact, sustainability, and social stratification.

During this seminar, participants will:
- Develop understanding of the multidimensional aspects of Peru’s growing food and cuisine industry.
- Explore and analyze the opportunities and challenges industry growth and prominence presents to local communities.
- Experience the various cultural aspects of food through experiential activities such as visiting a local market and learning to prepare Peruvian dishes.
